Bacon Ricotta & Courgetti Salad Recipe!

Girls night last night consisted of great company (as always) a super low fat healthy dinner followed by frozen yogurt and Channing Tatum...... 
Melly made me this amazing warm salad that I just had to share! At only approx. 340 calories a portion and full of nutritional goodness you can have yourself a little guilt free treat for afters! :0)

Ingredients to feed 2:

1/2 cup Peas
1/2 cup Sweetcorn
1/2 x Red onion
1/4 cup Mushrooms - diced 
6 slices of bacon 
3 x courgettes - Spiralized
1 handful of spinach
1 x tbsp sesame seeds
Drizzle or 2 of lemon juice
1 x garlic knorr flavour pot
1 dash fajita seasoning
Salt n Pepper to Season 

Spiralize the courgette's
Boil/steam your corn and pea's.
Griddle the bacon and put to one side. Then Fry onion and mushrooms, after a couple mins, add courgette, spinach, seseame seeds, seasoning, garlic pot, lemon juice. Once cooked down (around 5 minutes), slice the bacon and return to the pan to heat through. 
Serve with a loving dollop of ricotta cheese on the top!
