Vegan Choco Chip & Pistachio Cookies!

My friend Tara put this recipe together for me for my original blog many moons ago, but it's such a damn good recipe I felt like it had to be shared again through Blonde Ambitionz too. They aren't super healthy... but they aren't hugely fat ridden either. I feel like the coconut oil makes them a little lighter in cookie choices... OK they are just literally one of the tastiest cookies in town, you'd be crazy not to give them a go!! 


1 1/2 cups unbleached all-purpose flour
1/2 tsp kosher salt
3/4 tsp baking powder
1/2 tsp baking soda
1/2 cup extra virgin, unrefined coconut oil
1/2 cup granulated sugar (or coconut palm sugar)
3/4 cup light brown sugar
1 tbsp flax meal + 3 tbsp very warm water*
1 tsp vanilla extract
3/4 cup chopped pistachios, shells removed (Salted or unsalted, it's up to you. I prefer the salty kick.)
1/2 cup chocolate chips (3/4 cup if you want it super chocolatey; I use non-dairy chocolate chips)

How we do:

~Preheat oven to 180 degrees C. Line a large baking sheet with parchment paper and set aside. (Silicone baking mats aren't the best choice when working with coconut oil cookie dough. The silicone mat allows the batter to spread too much and you'll end up with thin cookies.)

~Mix flax meal and water together in a small bowl and allow it to gel and absorb all the water. Set aside. (Do not add flax meal and water mixture to sugar until it has thickened and absorbed the water. This usually takes about 10 minutes for me.)

~In a large bowl, whisk together flour, salt, baking powder and baking soda. Set aside.

~Using a mixer, cream coconut oil and sugars together until completely incorporated. I use my hand mixer to mix the oil and sugar for about 3 minutes, then use my spatula to make sure it's all creamed together nicely and not crumbly.

~Add flax meal water mixture and vanilla and beat for an additional 2 minutes. With mixer on low, slowly add dry ingredients. Mix until just incorporated. Don't over mix. Now it will be a little crumbly.

~Stir in pistachios and chocolate chips. Again, the dough will be crumbly, but it'll form nicely into tablespoon size balls of cookie dough. Place balls on prepared cookie sheet, about 2 inches apart. Bake for 12 minutes or until edges are lightly browned. Allow cookies to cool on cookie sheet for another 2 minutes. 

Transfer to wire rack to cool completely. Devour.

Laughter seems part of daily life where before it was infrequent or didn’t exist at all. A phone call or two during the day helps to get you through a long day’s work and always brings a smile to your face. 
In their presence, there’s no need for continuous conversation, but you find you’re quite content in just having them nearby. 
Things that never interested you before become fascinating because you know they are important to this person who is so special to you. 
You think of this person on every occasion and in everything you do. 
Simple things bring them to mind like a pale blue sky, gentle wind or even a storm cloud on the horizon. 
You open your heart knowing that there’s a chance it may be broken one day and in opening your heart, you experience a love and joy that you never dreamed possible. 
You find that being vulnerable is the only way to allow your heart to feel true pleasure that’s so real it scares you. 
You find strength in knowing you have a true friend and possibly a soul mate who will remain loyal to the end. Life seems completely different, exciting and worthwhile.

Get In My Belly! Vitl Super-Greens Protein Banana Bread

I spent the first part of the year seriously trying to teach myself to intake more calories in a 'Bulk' before finding that I had transformed myself into a hungry hippo that just couldn't ever get full!! 
I suppose the 'Bulk' was a success, I gained the weight I wanted to... then as I do quite often, decided I felt too 'Fluffy' and wanted to shred it all back off.... Its a woman's prerogative okay? 
So at the minute I'm searching for that happy medium. I'll talk a little more in depth about the challenges I faced during my first ever 'Purpose Bulk' in a later post but moving on for now...

Desperately trying to get the abs back in shape before Bodypower expo this May (I have to at least 'try' to keep up with Michelle Lewin right?)  I've been looking for recipes that will cure my sweet tooth, fuel my body with nutrients and keep me full all at the same time... don't ask for much do I? Imagine my delight when the fairy godmother of clean eats VITL sent me a goody pack and recipe to use for their Newly launched Super Greens!! Obviously, Sunday fun day was spent in the kitchen with my favourite little helper Tatiana where we created the incredible hulk of a banana bread, PACKED with Protein & Super Green goodness which went down a treat!!

What you need: 
100g Ground almonds
50g Hemp protein
50g Ground oats
1tsp Cinnamon
4 Sachet VITL Greens powder
1.5tsp. Baking powder
4 Organic eggs (beaten)
3 Ripe bananas (mashed)

& it's as simple as:
Blend together the wet ingredients. In a separate mixing bowl mix through the dry ingredients before combining with the wet mixture. Pour into a bread tin greased with coconut oil and lined with baking parchment, then bake at 180 for 40-45 minutes until cooked through. Allow to cool on a wire rack et voila! Enjoy!!

Runners will once again be racing their way past world-famous landmarks in Westminster, the heart of central London, as The Vitality British 10k returns to the capital on Sunday 10th July.

15,000 runners took part in 2015 clocking up over 150m kilometres between them and this year, race organisers are expecting it to be more popular than ever before.

Jamie Warren, Head of Marketing from new race organisers, said: “We are delighted that the 16th Vitality British 10k is returning to the capital – our participants tell us it’s the perfect race with a landmark packed, central London route and an ideal summer date. We can’t wait to let everyone know what we’ve got planned to make the race day even more exciting for both the runners and city spectators alike – watch this space!”

Starting on Piccadilly outside The Cavalry & Guards Club on Hyde Park corner, runners will make their way past huge crowds and London landmarks including the London Eye, Big Ben and the Houses of Parliament. The route proves hugely popular with both new and seasoned runners, attracted by the chance to run one of the most unique routes in the world and be spurred on by tens of thousands of spectators lining the route from start to finish.

The iconic route will see runners head along Piccadilly towards Piccadilly Circus, taking in Regent Street, Pall Mall and St James Palace. It’s then a right turn towards Trafalgar Square, before taking a left into Charing Cross Road. The route then drops down to the Embankment, before turning left towards the City. Following the Embankment, runners will take a left into Temple Place, where they’ll follow the length of Temple Place before making a wide turn back onto the Embankment westbound, soaking up the atmosphere for almost 2km before turning left onto Westminster Bridge.

Here runners will u-turn in front of the South Bank Lion Statue and towards the spectacular backdrop of Big Ben and the Houses of Parliament, take a loop of Parliament Square and then head towards the finish straight ready to cross the finish line on Whitehall.

Cllr Robert Davis, Westminster City Council cabinet member for the built environment, said: “I am delighted that Westminster will once again be welcoming more than 15,000 runners to the heart of London. We work incredibly hard to maintain the City of Westminster’s beautiful heritage so that it can continue to inspire as it has done for hundreds of years. There really is no more scenic route in London and I am sure that our iconic landmarks will serve as the perfect motivation to those taking part.”

For 2016, all runners will receive a free finishers technical t-shirt from race partner, Brooks, a medal and the opportunity for a post-race massage on race day.
