I love me a wham bam thank you mam breakfast in the morning,
with my schedule I simply don’t have time to be faffing about.. the following recipe
you can make ahead, reheat in the microwave and tadaaar – breakie in minutes!
I know, I know, you’re welcome!
Here’s what you need:
6 large eggs
1 tbsp coconut oil
1 large vine tomato, diced into biddy pieces
1 red pepper also finely diced
125g cheese – shredded
6 x 8inch wholemeal tortillas
And here’s how you do:
Slice n dice your veggies and give them a 1 minute fry in
the coconut oil over a medium heat
While that’s frying, whisk together the eggs in a large
bowl, add some pepper, or Mrs Dash seasoning to taste (highly recommend Mrs
Dash tomato basil!)
Add the eggs to the pan, scramble scramble scramble!
On a flat surface lay out some grease-proof paper and your
tortilla on the top.
Top the tortilla with 1/6th of the eggy scramble,
top with grated cheese, fold the tortilla over the fillings, tuck in the sides
and fold into a burrito. Wrap the burrito in the parchment paper, allow to cool
and refrigerate in a small freezer bag.
These will last for up to a week in the fridge, or can be
frozen for up to a month.
When ready to demolish just zap them in the microwave for
a couple of minutes until heated through!
